Blue Apron Meal | Spice Rubbed Pork Medallions

I’ve recently starting getting meals delivered from a company called Blue Apron.  They send everything I need to create a great meal for two people.

With my busy schedule, it’s really nice to know that dinner is taken care of three nights a week.  And they often send ingredients that I just wouldn’t think to combine or pick up at the market.

Last month, because of Blue Apron, I rediscovered using fresh peas.  I had forgotten how sweet and juicy they could be!

Spice Rubbed Pork Medallions

This week, one of my dishes was a delicious spice rubbed pork.  You can see their recipe here.

The spice rub was delicious, but a little too spicy for my picky eater husband-to-be, (hereinafter called H).

This meal reminded me a lot of the way I like to cook.  The pork was good quality and well seasons (if I had been doing the shopping I’d have bought bone-in pork tho) and one of my favorite figure-friendly strategies is to mix veggies into my starches, which the recipe does with fresh green beans sauteed into the jasmine rice.

Tasty peach salsa

The salsa was the star.

It included a peach salsa and yummy cilantro, so I was pretty happy.   I adore the combo of fruit, cilantro and other yummy bits, and this peach salsa is a nice option to fill in for my beloved mango salsa.

But the mango version I’ll save for another post.

 

I get my blue apron deliveries on Wednesdays, and completely enjoy unboxing my three meals for the week and pouring over the recipes, trying to decide what I’ll be eating.  It’s a really nice shortcut, and I highly recommend you give it a try!
